Being on vacation as I am, I like to keep it quick and simple. And that is exactly what this snack/appetizer is.
Goat cheese is a major weakness of mine. Okay, cheese in general is a weakness of mine. But goat cheese really gets me because it’s creamy and easy to combine with either sweet or savory flavors for a fancy snacking extravaganza. Today, my mom and I were in the savory mood. We took half of a log of goat cheese (we are saving the other half to experiment with later) and rolled it into some toasted pine nuts, minced basil leaves, minced parsley, and garlic seasoning. The result: an explosion of taste that is addicting and perfect to pair with grapes, Wheat Thins, and some Sauvignon Blanc (which is exactly what we did!).
How can you resist something so easy? You can make this in the time it takes to make a grilled cheese, and it is so impressive looking and gourmet. Try it at your next cocktail party, potluck event, or whenever you’re craving some cheese.
