You know those days where you just want to eat something light and refreshingly tasty? Well, here is your new go-to: asian-inspired lettuce wraps.
All you need are some fresh ingredients: grilled chicken, shredded carrots, diced cucumber, brown rice, peanuts, anything you feel like adding and can find in the dining hall.
Today, I worked with what I could find and used chicken, cucumbers, brown rice, peas, and red onion.
Throw all the ingredients in a bowl. Add in sauce (I made a sauce using Asian Sesame salad dressing, Sriracha, a dash of ground pepper, and sweet thai chili sauce). Mix it all up and scoop into clean lettuce leaves (found those in the deli section of the dining hall).
Looks good and tastes even better!
