So, we know last time I attempted to make a chocolate chip cookie for one it became more of a chocolate chip muffin for one. Which is great because I love me a good muffin. But it did not satisfy my craving, my yearning…for a homemade chocolate chip cookie.
I now present to you a ratio of ingredients that has gotten me 1 step closer to a perfect situation: being able to make just one perfect chocolate chip cookie whenever I want!
Try it. Love it. Make it again.
The 60-Second Chocolate Chip Cookie (adjusted from (Picky Palate)
Ingredients:
- 1 Tbsp softened butter
- 1 Tbsp granulated sugar
- 1 Tbsp brown sugar
- 1 Tbsp beaten egg egg (this is not a full egg, don’t worry you will make another cookie right after this one so the rest will not go to waste)
- 2-2.5 Tbsp flour
- 1/8 tsp baking soda
- 1/8 tsp salt
- 1/8 cup chocolate chips
In a ramekin, cream butter and sugars together. Add egg and vanilla and beat together until well combined. Stir in flour, baking soda and salt. Stir a couple times, then add chocolate chips and mix until just combined. Microwave for 30 seconds then remove. The cookie will look a little gooey, but that’s a good thing. Let the cookie set and cool for a minute of so (however long you can stand waiting). Enjoy!
